musical pairing: “Sweet Darlin’ ” She&Him

I love eggs.
Eggs are good for you, they’re economical, and incredibly versatile.
A single egg provides 12% of your daily recommended intake of protein and not only does protein help keep you full but can aid in muscle repair, growth, and maintenance. While many dieters and exercise/diet crazy tend to focus on what not to eat it is importatnt to look to good sources of fuel for our bodies. Eggs are one of those sources that is great to reach to. The protein in eggs is of such quality that it is sometimes looked to as a comparison for other sources of the same nutrient.

Also, they’re cheap.

Even the fancy ones.

CHEAP.

At around 15 cents a piece you could be feeding yourself and family a high quality source of protein for a pretty price tag.

Omelettes, fried, sunny side up, with bacon, scrambled, for breakfast, for dinner, eggs are awesome.

So I offer you this. Baked huevos rancheros for one or many. These are perfect for one, set it up and let it bake while you make your coffee or get your bag together for the day. Or, bake these individually in a cupcake tin and pop em out for a frugal and healthy brunch for many.

Baked Huevos Rancheros

per egg

1 tablespoon ranchero sauce, homemade, jarred (HEB has a good one), or just a good chunky salsa

1 teaspoon butter or butter substitute

Preheat oven to 350.

Prep ramekins/cupcake tins with non stick spray. This is important.

Combine butter and ranchero sauce in your ramekin or cupcake tin. 1 tablespoon sauce/1 tsp butter per cupcake tin or 2 tablespoons sauce/2 tsp butter per ramekin.

(Cupcake tins hold ONE egg, ramekins hold TWO eggs)

Place tins or ramekins in the oven for 3 to 5 minutes, until butter is melted.

Remove and stir to combine.

Add egg/eggs.

Bake for 15 to 19 minutes depending on how runny you like your yolks.

Season to taste with salt and pepper.

Enjoy!

I loved these right out of the ramekin with some toast. Yum!
